			<content:encoded><![CDATA[<p>Is there really something like inorganic cacao? Inorganic is the definition of something that isn’t. In most cases, inorganic would simply mean not alive. It seems counterintuitive to not select organic cacao, or Theobroma cacao, given the incredible properties of this bean. What is referred to in this case, specifically, is not the bean itself, but the method by which it is processed. The closer we are to the bean in its most natural state, the better the cacao is for our health. Organic cacao then would refer to the unadulterated bean and the incredible health benefits it would offer.<br />
This author has had the distinct advantage of having grown up in two countries. As a teenager, I became aware of the fact that my eyes were always bluer in Germany than they were when I was in the United States for a while. After some research, I believe I understand the cause of this unique phenomenon. In the 1980’s quite a bit of press was given to the European Union’s blocking of beef from America, labeling it as unfit for human consumption. Truth is that much American food is riddled with pesticides and processed beyond recognition. In Germany, I was used to foods that were closer to their “original” state, as it were. My bread was courser and tended to go bad more quickly, but, as I learned, it also contained many more nutrients than the American version, which often had to have nutrients added back in after the processing. There is a simple truth we must accept – the more processing our food undertakes, the more of the nutrients are depleted.<br />
The same is true of cacao. The more processed, into chocolate and cocoa, adding fats and fillers and, generally sugar, the less the healthful benefits remain. Thus, the closer we are to consuming cacao in its most natural form, the better its properties. Cacao, indeed, contains a multitude of nutrients. Phenylethylamine, for example, has a unique side effect in the body. When consumed, one becomes both calm and alert at the same time. Cacao also contains magnesium and even trace amounts of iron, zinc, copper, and calcium (http://healthyfoodrawdiet.com/cacao/organic-cacao).  Antioxidants, and specifically flavonoids, help retard the aging process by reversing the body’s oxidization. Chromium, found in cacao, which gained press in the last ten years, has a little known side effect with staving off sugar cravings.<br />
Cacao also provides us with protein, fat, and carbohydrates. Lesser known are the benefits of cacao’s fiber. The Department of Metabolism and Nutrition, in Madrid, Spain, reported that cacao’s “the glucose retardation index of cocoa . . . were similar to other natural commercial insoluble fibres.” In other words, the good fiber in cacao helped keep glucose levels down.<br />
In order for cacao to be marketed organic, it must be certified as organic. True organic cacao contains many nutrients we do not usually consider, making it truly a beneficial part of any diet. The key is less is more. The less processed out cacao, the more we will reap its benefits.</p>

			<content:encoded><![CDATA[<p>There are two things I need in this world. Oxygen and chocolate. Okay, maybe not quite, but it is up there and I wouldn’t want to do without. I know something is up when the news informs me that research now says that chocolate is good for me. It’s always been my guilty pleasure, but now it’s a way for me to take care of my health? I’m delighted beyond words, as I picture myself indulging in the name of heart health. A stroll even through Wal-Mart is an eye opener, as the candy aisle has recently begun to sport about twenty different kinds of chocolate. So what is it about the derivation of cacao that has caused the news media and science to aide me in my quest for the consumption of the food of the gods?<br />
Is cacao the same as cocoa? Well sort of. Generally cacao refers to the raw material from which we derive chocolate. When we, traditionally, speak of cocoa or chocolate, we refer to the end product of cacao. “&#8217;Cacao&#8217; is the closest word we have to the original Nahuatl, Aztec word, which probably has a history going back a thousand years or more,” according to Martin Christy, British chocolate lecturer. (Was I the only one who didn’t know there were things like chocolate lecturers?) The words, however, are more or less interchangeably used. Those in the field habitually use cacao to reference the botanical species, tree, the plant parts (pods, beans, etc) and cocoa the processed material from the cacao. There are, of course, some purists who refuse to use the word chocolate at all, blaming chocolate and cocoa on bad British pronunciations.<br />
So why has this little bean made so much commotion in the news lately? Cacao is rich in antioxidants and high in flavonoids. The darker the chocolate, the more research has shown it to benefit the heart.  In research done on heart patients, the sticky stuff (platelets) that sticks to the insides of your arteries, which is exacerbated by stress, was shown to be severely reduced within two hours after consuming dark chocolate (Flamer, Herman, et al, 2007). This same research indicated that even in healthier individuals who have other risk factors, smokers, for example, a reduction in factors we associate with coronary disease was seen.  Only real cacao works. The control group in the study, haven been given cacao free chocolate showed no decreases in artery diameter and no reduction of platelets.<br />
So, what are flavonoids and antioxidants and why do we need them? Flavonoids are a type of antioxidants, a “superfood” (http://www.healthyfoodrawdiet.com/cacao), if you will. However, according to Dr. Donald R. Buhler and Dr. Cristobal Miranda of the Department of Environmental and Molecular Toxicology at Oregon State University, “dietary intake [of flavonoids] is quite high compared to other dietary antioxidants like vitamins C and E.” Overall, we begin to rust from the day we are born; we oxidize and there is little we can do about it. Antioxidants keep that rust at bay, as it were. They are, in many respects, the eternal fountain of youth, giving our bodies the materials it needs to counteract the side effects of living and breathing and aging. And, given that I can’t think of a yummier antioxidant than cacao, I will be quite happy to continue a good, medicinal dosage!</p>

			<content:encoded><![CDATA[<p>What makes a food a healthy food? What properties does it have to make it a nutritional super food? We age because our bodies break down and wear out. Why? From the moment we draw our first breath, we begin the, usually, slow process of dying. Every breath gets us a step closer. The unfair part is that the process of aging is initiated with breath. Oxygen, so vital for our living, brings us daily closer to death. Think of the aging process as rusting. That is why antioxidants are so essential. They help the body deal with the process of “rusting” and thereby help stave off aging and help the body function optimally.<br />
Green tea is quite a powerhouse. In the last couple of years, dentists have been recommending green tea because it has been shown to kill the bacteria causing plaque. As we know, dental plaque is, indeed, related to cardiovascular plaque and those with oral issues often also have heart issues. Further, studies have shown that green tea is beneficial in treating mouth and throat infections, which might explain its connection to a decrease in esophageal cancers. Green tea has been linked in several studies with a reduction of cancer proclivities, probably because of its high levels of antioxidants.<br />
Usually, when we think of cacao, we think of hot cocoa. Cacao, even cacao tea http://healthyfoodrawdiet.com/cacao/cacao-tea),  however, has often been recommended as a substitute for other, more harmful drinks. While cacao does contain some caffeine, it tends to be less acidic than coffee or black tea and therefore tolerated more easily. Furthermore, cacao, especially unprocessed and unsugared, has loads of other health benefits. Containing such properties as Phenylethylamine, it is able to induce both a sense of calmness and alertness. Cacao’s levels of flavonoids are unsurpassed by most foods and contain other minerals like magnesium and chromium provide the body with nutrients that will stave off sugar cravings.<br />
Blueberries, like green tea, are loaded with antioxidant vitamins. Blueberries, cousins to cranberries and bilberries, have been shown to promote urinary tract health. Interestingly, the tartness associated with wild blueberries is one of the reasons blueberries are so potent. That tartness leads to helping the body in becoming more alkaline (and less acidic). Acidity, we know, makes our system work harder. Our body has to strip magnesium and calcium from our bones to reduce the body’s acidity and make it more alkaline. Over time, a high level of acid in the body will affect the kidneys that are under load from the acidity and are working overtime to neutralize it. Blueberries, on the other hand, help restore and maintain a good level of alkalinity.<br />
It has been suggested by numerous studies that cancer itself may be the body’s reaction to being under the load of inflammation over time. Any time we force our bodies to work overtime and we do not give our bodies the raw materials it needs to deal with that level of stress, we invite a whole host of other issues.  Superfoods, like cacao, green tea, and blueberries are generally high in antioxidants and help the body fight inflammation, while providing it with the nutrients it needs to function optimally.</p>

Our bodies are, literally, under attack, either by the normal processes of living (oxygen) or the other things we encounter on a daily basis that leave our bodies open to attack (H1N1). What we feed our bodies will either help in the fight or tear it down further.  There are other minerals and nutrients our bodies need to do that work effectively.</p>
<p>It is the sweet potato, not the carrot, that will have the greatest impact on your vision. Sweet potatoes “outpower” carrots. One carrot contains 203% of the daily recommended vitamin a, but a sweet potato weighs in with 262.2% of the daily recommended dose. Sweet potatoes also contain vitamin C and B6 are known to help the body fight off inflammation.</p>
<p>Tomatoes contain vitamin C and vitamin A, but they also contain potassium (8% of the RDA). Tomatoes real punch comes from lycopene, which is present when tomatoes are cooked. Lycopene made headlines because of its impact on prostate cancer, but research has indicated that it may also be beneficial in warding of stomach, colon, breast, and lung cancers. <p>You are what you eat. 			<content:encoded><![CDATA[<p>A friend of mine joked disgustedly one day that people treat their dogs better than their children. She may have had a point there. We explored a variety of sites dedicated to dog health, including several sites that admonished people to finally stop being lazy and feed their dogs a raw diet. Better overall health for your dog and no more doggy odors, the site reproached the lazy dog owners. Besides wondering if dogs really cared for organic biscuits (I don’t know about you, but I know my dog isn’t very discriminating), it did cause me to wonder if there was some benefit to a raw diet. If dogs lose their “doggy odors”, would a raw diet do the same for humans?<br />
Why is a raw diet beneficial? After hearing Oprah and Alicia Silverstone discuss raw vegetables and the resulting odorless poop, I must admit I was a little curious. Alicia went totally vegan and I wasn’t sure I was up for that, but I wanted to know how a raw diet would benefit me. The first thing I discovered was that a raw diet is most associated with cleansing the body. Cooking food usually kills the enzymes in food. Enzymes are used by the body to break down foods and help the body process minerals and nutrients.  Might that mean that, without proper enzymes, much of the food leaving me is unprocessed? If that were the case, then many of the vitamins and nutrients I am hoping to consume also leave my body without being absorbed properly.<br />
Indeed, a diet rich in raw foods is a diet more replete with nutrients, as cooking often destroys the vitamins and minerals available in our foods. This is why steaming has so often been recommended, rather than straight out cooking. We literally boil away the nutrients.<br />
Raw food does not need to mean meatless. What is recommended is high quality meat sources, like salmon or poultry and other richer sources of protein. Unbelievably, cacao “itself is about 19% protein.” Far more interesting is the research from Dr. John Livesey, Scientific Officer for the Department of Endocrinology at Christchurch Hospital in New Zealand. Dr. Livesey speaks of a study of group of men. One third consumed no cacao, one third consumed a moderate amount, and one third consumed about 4.2 grams per day. “The most remarkable finding of the study was that the one third of men who consuming the largest amounts of cocoa had a 45 to 50% lower death rate than did the one third who consumed no cocoa.” His research specifically indicated the darker variety. I discovered that I do pretty well. I eat better than I thought and stepping it up a bit wouldn’t be as difficult as I thought. I have begun to make some of these changes, though not as drastically as Ms. Silverstone. I have noticed an improvement in my energy levels and mood. A raw diet still affords me many of the foods I love. Ironically, what’s better for my health also tends to be better for my wallet as well, as processed foods tend to cost more anyway.</p>
